  • 1. Aquam in cacabō mediocrī ad plēnum bullitum perdūc. Penne adde et coque per 9 ad 11 minūta, dum sint modo al dente: pasta in superficiē mollis esse dēbet, sed in mediō adhūc morsum firmum praebēre. Bene cola et breviter servā.


  • 2. Oleum olīvae in patinā amplā super ignem medium-altum calefac. Pectus pullī in ūnā strātūrā adde et piperī nigrō et origanō condi. Coque per 4 ad 5 minūta, prout opus est vertendō, dum pullus leviter aureus sit et modo percoctus, sine ūllō vestīgiō crudītātis in mediō.


  • 3. Allium in patinam adde et coque per 30 secundās partēs, assiduē movendō, dum fragrantiam emittat sed colōrem nōn capiat. Iūs crēmōsum infunde et ignem ad medium redūc. Lene ferveat per 2 ad 3 minūta, movendō, dum iūs pullum leviter oblinat et corpus lene atque cohaerēns accipit.


  • 4. Penne colāta in patinam adde et misce per 1 minūtum, dum pasta aequāliter oblinātur et iūs costīs cavōque cuiusque particulae adhaeret. Mixtūra nitida manēre dēbet, nōn fluida.
