  • Hvide chokoladeknapper, 180 g


  • Fremgangsmåde



  • 1. Kom de hvide chokoladeknapper i en varmefast skål sat over en gryde med næsten simrende vand. Rør forsigtigt og konstant i 3 til 5 minutter, indtil chokoladen er helt smeltet og glat uden synlige korn eller usmeltede stykker. Konsistensen skal være blank og flydende, ikke varm.


  • 2. Tag skålen af varmen, og lad chokoladen stå i 2 minutter under omrøring en eller to gange. Den skal stadig kunne hældes, men begynde at tykne let langs kanterne.


  • 3. Fordel den smeltede chokolade jævnt i 4 små serveringsglas eller ramekiner, med 45 g pr. portion. Glat overfladen med bagsiden af en ske, så hver portion sætter sig med en ren og jævn finish.


  • 4. Afkøl i 45 til 60 minutter, indtil overfladen har sat sig, og midten er fast nok til at holde formen, mens den stadig er mør på tungen.


  • Anretning og servering



    Server afkølet i den beholder, den har sat sig i. Overfladen skal være glat og bleg med en ren kant og en blød, eftergivende midte.
