  • Fremgangsmåde


  • 1. Kom sukker og glukosesirup i den lille tykbundede gryde. Sæt den over lav varme, og rør kun, indtil sukkeret begynder at opløses, og blandingen bliver flydende og klar, 2 til 3 minutter.

  • 2. Skru op til middel varme, og kog uden at røre i 4 til 6 minutter, indtil siruppen når et koncentreret, blankt stadie og viser 118°C på et digitalt termometer. Siruppen skal falde fra skeen i et tykt bånd.

  • 3. Tag gryden af varmen, og lad boblerne lægge sig i 30 sekunder. Hæld eller sprøjt siruppen i formen eller på den forede bakke i én lille portion.

  • 4. Lad slikket sætte sig ved stuetemperatur i 8 til 10 minutter, indtil det er fast at røre ved og helt uigennemsigtigt med en glat overflade.

    Servér jelly beanen alene, centreret og urørt, så dens farve og glans fremstår med fuld klarhed. Teksturen skal give efter rent ved første bid og derefter blødgøres til en kompakt, ensartet sejhed.
