  • 1. Hæld rødvinen i en lille tykbundet kasserolle, og sæt den over lav varme.

  • 2. Bring vinen til lige under kogepunktet over 3 minutter, så overfladen kun sitrer let. Lad den ikke bulderkoge; målet er jævn fordampning, ikke hård behandling.

  • 3. Lad den fortsætte med at simre i 5 minutter, indtil vinen er reduceret til en blank portion på 45 g med rundere aroma og en en anelse tykkere mundfølelse.

  • 4. Tag den af varmen, og hæld den gennem en finmasket si, hvis der er bundfald.
