  • 2. Sartaginem gravem vel craticulam super ignem medium calefac. Lardum adde et coque per 6 ad 8 minuta, pro necessitate vertens, donec pinguedo liquefacta sit et lardum alte subfuscum sit marginibus crispis. In patinam calidam transfer.


  • 3. In eadem sartagine botulum ientacularem super ignem medium coque per 8 ad 10 minuta, regulariter vertens, donec foris aequaliter subfuscus sit et tactu firmus. Medium omnino calidum esse debet et superficies bene caramelizata. Iuxta lardum transfer.


  • 4. Sartaginem non adhaerentem super ignem medio-lenem calefac et oleum coquinarium adde. Ova infringe et frige per 3 ad 4 minuta, leviter oleo calido superfundens si opus est, donec albumina omnino consistant et vitelli molles maneant sed formam teneant. Sale et pipere nigro condi.
