Inleiding



Hierdie is 'n gedissiplineerde, moderne bak wat op verhouding en helderheid berus: maer proteïen vir struktuur, volgraan vir substansie, en groente vir varsheid en ligtheid.   • Metode



  • 1. Plaas die volgraan in 'n kastrol met genoeg water om dit met 25 g te bedek. Bring tot 'n bestendige prut oor medium hitte en kook vir 15 tot 18 minute, of totdat dit sag is met 'n effense byt en die korrels apart bly eerder as opgeswel of pap. Dreineer goed in 'n fyn sif.


  • 2. Terwyl die graan kook, berei die maer proteïen voor. Verhit 'n braaipan oor medium-hoë hitte tot warm. Voeg die maer proteïen by en kook vir 3 tot 5 minute, draai soos nodig, totdat dit egalig gaar is en liggies bruin op die oppervlak. Die vleis moet ferm, sappig en nie meer deurskynend wees nie.


  • 3. Voeg die gemengde groente by dieselfde pan nadat die proteïen verwyder is. Kook oor medium hitte vir 4 tot 6 minute, roer af en toe, totdat die groente warm, helder van kleur en net-net sag is, terwyl dit steeds hul vorm en 'n skoon byt behou.


  • 4. Meng die gedreineerde graan en warm groente in 'n mengbak. Vou liggies deur sodat die groente onderskeibaar bly en die graan lig bly. Toets die balans van tekstuur deur aanraking: die bak moet stewig aanvoel, nie nat of dig nie.


  • 5. Rangskik die graan-en-groentemengsel in die middel van die opdienbord of -bak. Plaas die maer proteïen netjies bo-op of langsaan, en hou die samestelling kompak en ordelik. Bedien onmiddellik terwyl die graan warm is en die groente helder bly.
