  • 180 g gaar rotini-pasta

  • 70 g basiliekruid-pesto

  • 10 g olyfolie


  • Hoender en afronding


  • 140 g geroosterde hoenderdy met vel

  • 10 g Parmesaankaas, fyn gerasper


  • Metode


  • 1. Bring die geroosterde hoenderdy vir 10 minute tot kamertemperatuur as dit verkoel was. Dit laat die vel eweredig weer bros word en die vleis warm word sonder om uit te droog.


  • 2. Plaas 'n swaar pan oor medium hitte en voeg die olyfolie by. Wanneer die olie glinster, plaas die hoenderdy met die velkant na onder in die pan. Druk liggies vir 1 minuut om volle kontak te verseker, en kook dan vir 4 tot 6 minute totdat die vel diep goudbruin, hoorbaar bros is en die vet skoon uitgebring is. Draai die dy om en warm die vleis vir 2 minute. Plaas oor op 'n bord en hou warm.


  • 3. Meng die gaar rotini met die basiliekruid-pesto in 'n mengbak. Skud of meng vir 30 tot 45 sekondes totdat elke spiraal met 'n dun, egalige glans bedek is. Die pasta moet soepel en onderskeibaar bly, nie saamgeklonter of vetterig nie.


  • 4. As die pasta afgekoel het, plaas dit terug in die warm pan vir 30 tot 60 sekondes oor lae hitte en roer versigtig, net totdat dit deurwarm is. Moenie toelaat dat die pesto donker word nie.
