Dit is ’n studie in selfbeheersing: wit sjokolade wat met presisie hanteer word en dan verhef word tot ’n mousse van ligte, suiwer soetheid en syagtige struktuur. Die resultaat is nie swaar nie, maar beheers en lugtig, met die sjokolade se melkagtige rykheid in perfekte balans gehou. Wanneer dit behoorlik verkoel bedien word, moet dit delikaat op die lepel wees en volledig op die verhemelte.

  • Wit sjokoladeskyfies, 180 g


  • Metode



  • 1. Plaas die wit sjokoladeskyfies in ’n hittebestande bak wat oor ’n kastrol met skaars pruttende water staan. Roer saggies en aanhoudend vir 3 tot 5 minute, totdat die sjokolade heeltemal gesmelt en glad is, sonder sigbare korrels of ongesmelte stukkies. Die tekstuur moet glansend en vloeibaar wees, nie warm nie.


  • 2. Verwyder die bak van die hitte en laat die sjokolade vir 2 minute staan, terwyl jy een of twee keer roer. Dit moet steeds gietbaar bly, maar effens aan die rande begin verdik.


  • 3. Verdeel die gesmelte sjokolade eweredig tussen 4 klein opdienglase of ramekins, met 45 g per porsie. Maak die oppervlak glad met die agterkant van ’n lepel sodat elke porsie in ’n netjiese, gelyke afwerking set.


  • 4. Verkoel vir 45 tot 60 minute, totdat die oppervlak gestol is en die binnekant ferm genoeg is om sy vorm te hou terwyl dit steeds sag op die tong bly.


  • Uitplatering en bediening



    Bedien verkoel in die houer waarin dit gestol het. Die oppervlak moet glad en lig van kleur wees, met ’n skoon rand en ’n sagte, meegewende middel.
