  • 170 g kyllingebryst uden skind og ben


  • Fremgangsmåde


  • 1. Opvarm ovnen til 220°C. Beklæd en lille bradepande, hvis det er nødvendigt for nem håndtering.

  • 2. Dup kyllingebrystet helt tørt med køkkenrulle. Form det til en ensartet tykkelse, så det tilberedes jævnt.

  • 3. Læg kyllingen i bradepanden og steg den i 16 til 18 minutter, afhængigt af tykkelsen. Overfladen skal få en let gylden farve, og den tykkeste del skal måle 74°C i midten.

  • 4. Tag kyllingen ud af ovnen, og lad den hvile på et bræt i 5 minutter. Kødet skal slappe af og forblive saftigt, når det skæres.

  • 5. Skær den rent på tværs af fibrene, og servér straks.

    Anret den skårne kylling i en pæn linje eller med let overlap på en varm tallerken. Præsenter den med den brunede overflade øverst og snitfladen synlig, så det indre fremstår saftigt og fint i teksturen.
