  • Kyllingebryst, uden skind og ben: 170 g


  • Fremgangsmåde


  • 1. Tag kyllingebrystet ud af køleskabet, og lad det stå ved stuetemperatur i 10 minutter. Dup det helt tørt. Dette er afgørende for ensartet bruning og en ren stegning.

  • 2. Forvarm ovnen til 220°C.

  • 3. Læg kyllingebrystet på den kolde ovnfaste pande. Sæt panden over middelhøj varme, og brun i 2 minutter på den første side, derefter 2 minutter på den anden side. Overfladen skal blive let gylden og begynde at få en stegt aroma.

  • 4. Sæt panden i ovnen, og steg i 8 til 10 minutter, afhængigt af tykkelsen. Kyllingen er færdig, når midten når 74°C, og kødet føles fast, men stadig let spændstigt ved berøring.

  • 5. Tag kyllingen af panden, og lad den hvile på en bakke eller tallerken i 5 minutter. Saften skal sætte sig, og indersiden skal forblive saftig.

  • 6. Skær på tværs af fibrene i pæne portioner, eller server hel, hvis det foretrækkes.


  • Anretning og servering


    Anbring kyllingen let forskudt fra midten på en varm tallerken, med snitfladen synlig, hvis den er skåret. Afslutningen skal være ren og beskeden, så kødet fremstår saftigt, svagt gyldent i kanterne og jævnt tilberedt hele vejen igennem.
