  • 1. Dup laksefileten tør med køkkenrulle. Overfladen skal være fri for fugt, så fisken steger rent, og glacen hæfter jævnt.


  • 2. Varm madolien op i sauterpanden ved middelhøj varme i 1 minut, indtil olien skinner og bevæger sig frit hen over panden.


  • 3. Læg laksen på panden med præsentationssiden nedad. Steg i 3 minutter uden at flytte den, indtil undersiden er dybt gylden og slipper panden rent.


  • 4. Vend laksen, og steg i 2 minutter på den anden side. Kødet skal netop være ugennemsigtigt ved kanterne og stadig let gennemsigtigt i midten.


  • 5. Tilsæt aromater og krydderier til panden, og rør dem kort rundt i den varme olie i 15 til 20 sekunder, kun indtil de dufter.


  • 6. Tilsæt den sojabaserede sauce i Hong Kong-stil, og ske den kontinuerligt over laksen i 1 minut. Saucen skal reducere let og dække fisken med et blankt, koncentreret lag.


  • 7. Tag panden af varmen, og lad laksen hvile i glacen i 1 minut. Kødet skal sætte sig til et saftigt, mørt resultat med en fin flage.


  • Anretning og servering



    Placér laksen en smule forskudt fra midten på en varm tallerken, og napér den med den resterende glace. Server den med en ren kant og en synlig glans, så saucen indrammer fisken frem for at begrave den.
