Ovo je argentinski stol u svom najizravnijem obliku: govedina nad vatrom, krumpir sa suhom, podatnom unutrašnjošću i umaci koji izoštravaju, a ne prikrivaju. Jelo počiva na kontrastu — pougljenjenost, sol, punoća i kiselost održani u točnom omjeru. Kada je pravilno pripremljeno, to nije rustikalna hrana; to je disciplinirano kuhanje velikodušna duha.

  • Postupak



  • 1. Pripremite krumpir.

  • Zagrijte pećnicu na 220°C. Stavite 180 g pečenog krumpira na lim za pečenje i pecite 30 do 40 minuta, ovisno o veličini, dok kožica ne postane suha, a sredina potpuno ne popusti pod vrhom noža. Unutrašnjost treba biti rahla i potpuno mekana, bez otpora u središtu.

  • 2. Ispecite govedinu.

  • Po potrebi lagano posolite 220 g goveđeg odreska prema referenci jela, zatim pecite na roštilju na jakoj vatri 2 do 4 minute sa svake strane, ovisno o debljini, dok izvana ne dobije duboku smeđu boju i ne bude pečen do željenog stupnja. Za medium-rare pečenost maknite odrezak na unutarnjoj temperaturi od 52°C do 54°C; za medium maknite na 57°C do 60°C. Ostavite da odstoji 5 minuta kako bi se sokovi slegnuli, a meso opustilo.

  • 3. Zagrijte umake.

  • Dovedite 20 g chimichurri umaka i 10 g tradicionalnog umaka na sobnu temperaturu ili ih vrlo nježno zagrijavajte 1 do 2 minute ako ih namjeravate poslužiti blago tople. Trebaju ostati tekući i živahni, ne toliko vrući da im se otupe karakteristike.

  • 4. Dovršite krumpir.

  • Zarežite pečeni krumpir uzdužno. Lagano ga otvorite vrhom noža kako bi unutrašnjost pustila paru i rastresla se. Meso krumpira treba ostati cjelovito, ali mekano, sa suhom, pahuljastom teksturom, a ne vlažnom.

    Serviranje i posluživanje



    Stavite pečeni krumpir malo izvan središta na topli tanjur i položite odrezak s roštilja pokraj njega, tako da zapečena površina ostane vidljiva. Žlicom prelijte chimichurri preko govedine ili uz nju, a zatim dovršite tradicionalnim umakom kao suzdržanim naglaskom. Tanjur treba djelovati uravnoteženo i promišljeno: meso prvo, krumpir drugo, umaci kao završna svijetla nota.
