  • Postupak


  • 1. Stavite cijeli limun u mali lončić i prelijte ga vodom tako da ga prekriva za 20 g. Zakuhajte vodu do laganog vrenja na srednje jakoj vatri, zatim smanjite na laganu vatru i održavajte jedva primjetno vrenje 30 minuta. Limun bi trebao malo omekšati, a kora postati sjajna i nježna bez pucanja.

  • 2. Isključite vatru i ostavite limun da stoji u vrućoj vodi 5 minuta. Time se unutrašnjost slegne i tekstura u sredini postane ujednačena.

  • 3. Izvadite limun iz vode i ohladite ga tek toliko da se njime može rukovati. Plod bi pod laganim pritiskom trebao djelovati podatno, a kora se trebala glatko podavati nožu.

  • 4. Poslužite limun cijeli ili ga prerežite za stolom kako bi oslobodio svoju aromu. Meso bi trebalo biti sočno, svježe i omekšano, s ublaženom, ali još prisutnom gorčinom.
