Uvod



Ovo je studija suzdržanosti: bijela čokolada obrađena s preciznošću, zatim uzdignuta u mousse blijede, čiste slatkoće i svilenkaste strukture.   • Komadići bijele čokolade, 180 g


  • Priprema



  • 1. Stavite komadiće bijele čokolade u zdjelu otpornu na toplinu postavljenu iznad lonca s jedva kipućom vodom. Miješajte nježno i neprekidno 3 do 5 minuta, dok se čokolada potpuno ne otopi i postane glatka, bez vidljivih zrnaca ili neotopljenih komadića. Tekstura treba biti sjajna i tekuća, ali ne vruća.


  • 2. Maknite zdjelu s izvora topline i ostavite čokoladu da stoji 2 minute, uz jedno ili dva miješanja. Trebala bi ostati dovoljno tekuća za izlijevanje, ali se početi lagano zgušnjavati uz rubove.


  • 3. Ravnomjerno raspodijelite otopljenu čokoladu u 4 male čaše za posluživanje ili ramekina, po 45 g po porciji. Zagladite površinu stražnjom stranom žlice kako bi se svaka porcija slegnula u čist, ravan završni sloj.


  • 4. Hladite 45 do 60 minuta, dok se površina ne stisne, a unutrašnjost ne postane dovoljno čvrsta da zadrži oblik, a da pritom ostane nježna na jeziku.
