仔牛のアスピック・テリーヌ

仔牛の内臓肉と肉を、調味したブイヨンで固めた、塩味の冷製ミートゼリーです。クラシックな仔牛のアスピック、またはミートテリーヌに最も近い一品です。

Ingredients


  • 仔牛の内臓肉と肉: 110 g

  • ゼラチン/ブイヨン: 35 g

  • 調味料: 5 g


  • Total: 150 g

    Instructions


  • 1. ゼラチン/ブイヨンの混合物を、完全に溶けてなめらかになるまでやさしく温めます。

  • 2. 仔牛の内臓肉と肉を加えて混ぜ、好みに応じてほぐすか、小さめの塊のままにします。

  • 3. 5 gの調味料を全体に均一に加えます。

  • 4. 小さな型または器に流し入れ、空気だまりを抜くように軽く押さえます。

  • 5. 完全に固まるまで冷やします。少なくとも2〜4時間が目安です。

  • 6. 型から外すかスライスして、冷たいまま供します。
