  • 1. Clibanum ad 180°C praecalefac. Pone parvum vas clibano idoneum super lancem coquinariam, ut aequaliter calefiat et facile tractari possit.

  • 2. Adde 100 g casei in vas strato aequali. Si caseus unus globus est, eum in medio vasis pone; si tritus est, aequaliter distribue sine compressione.

  • 3. Coque per 6 ad 8 minuta, donec caseus omnino emollitus, nitidus, et ad margines subsidere incipiens sit. Superficies debet liquefacta potius quam arida videri, et medium sine resistentia cedere debet.

  • 4. E clibano remove et per 1 minutum quiescere sine. Hoc sinit caseum paulum stabiliri, dum per totum fluidus et calidus manet.
