Inleiding


Dit is 'n studie in selfbeheersing: hoenderbors wat met presisie gaargemaak word totdat die vleis soepel, suiwer en diep hartig is.   • Metode


  • 1. Haal die hoenderbors uit die yskas en laat dit 10 minute by kamertemperatuur staan. Dep dit heeltemal droog. Dit is noodsaaklik vir egalige verbruinering en 'n skoon braairesultaat.

  • 2. Voorverhit die oond tot 220°C.

  • 3. Plaas die hoenderbors in die koue oondvaste pan. Sit die pan oor medium-hoë hitte en skroei vir 2 minute aan die eerste kant, dan 2 minute aan die tweede kant. Die oppervlak moet liggies goudkleurig word en 'n geroosterde aroma begin aanneem.

  • 4. Plaas die pan in die oond en rooster vir 8 tot 10 minute, afhangend van die dikte. Die hoender is gereed wanneer die middel 74°C bereik en die vleis ferm voel, maar steeds effens veerkragtig is om aan te raak.

  • 5. Haal die hoender uit die pan en laat dit vir 5 minute op 'n skinkbord of bord rus. Die sappe moet setel en die binnekant moet klam bly.

  • 6. Sny dwars op die grein in netjiese porsies, of bedien heel indien verkies.
