Inleiding

  • Metode


  • 1. Dep die varkenskouersteaks droog met kombuispapier. Sny slegs los oppervlakkige flapjies af indien nodig; hou die vet en natuurlike grein ongeskonde. Rasper die gemmer fyn en hou dit eenkant.

  • 2. Plaas die vark op 'n plank en druk die gerasperde gemmer eweredig oor albei kante, met die fokus op die vleis eerder as die vet. Laat dit vir 10 minute staan sodat die gemmer die oppervlak begin parfumeer.

  • 3. Plaas 'n swaar braaipan oor medium-hoë hitte en laat dit behoorlik warm word, 2 tot 3 minute. Sit die varksteaks in 'n enkele laag in die pan en skroei vir 4 minute sonder om hulle te beweeg, totdat die onderkant diep verbruin is en skoon loskom.

  • 4. Draai die steaks om en gaar die tweede kant vir 4 minute. Verlaag die hitte na medium en gaan voort met gaarmaak vir 8 tot 12 minute, draai een of twee keer om, totdat die buitekant mahoniebruin is en die binnekant 68°C bereik vir sappige vleis wat maklik gesny kan word.

  • 5. Laat die vark vir 5 minute op 'n warm bord rus. Die vleis moet ferm maar tog meegewend voel, met helder sappe en 'n geurige gemmernoot op die oppervlak.

  • 6. Sny die steaks dwars oor die grein in dik stukke, of bedien hulle heel indien verkies. Skep enige pansappe oor die vleis voordat dit opgedien word.

    Rangskik die vark in 'n netjiese lyn of met 'n ligte oorvleueling op warm borde. Hou die aanbieding ingetoë, sodat die verbruin oppervlak en ligte gemmerglans duidelik sigbaar bly. Bedien onmiddellik terwyl die buitekant bros bly en die middel sappig bly.
