  • Fremgangsmåde


  • 1. Bring vand i en 2,5 L gryde i kraftig kog. Tilsæt pastaen, og kog den i 8 til 10 minutter under lejlighedsvis omrøring, indtil strengene netop er møre, men stadig har en let fasthed i midten.

  • 2. Mens pastaen koger, piskes æggene i en stor skål, til de er helt glatte og ensartede.

  • 3. Hæld pastaen i et dørslag, og gem en lille mængde af kogevandet i gryden. Kom straks den varme pasta tilbage i den varme gryde, tilsæt derefter æggene, og vend konstant i 30 til 45 sekunder. Varmen fra pastaen skal tykne æggene til en cremet overflade uden at gøre dem til røræg.

  • 4. Hvis blandingen strammer for hurtigt op, løsnes den med lidt af det gemte pastavand, mens der vendes, indtil saucen bliver blank og flydende. Den færdige tekstur skal hænge ved pastaen i en satinagtig glans uden synlige klumper.

  • 5. Anret straks på en varm tallerken.

    Form pastaen til en pæn bunke midt på tallerkenen. Overfladen skal fremstå blank og jævnt dækket med en blød, flydende finish snarere end en tør sammenfiltret masse.
