Kalbsaspik

Eine klassische kalte Kalbszubereitung in einer herzhaften, gelatinehaltigen Brühe, ähnlich wie Fleischaspik oder Kalbsgelee. Sie wird typischerweise kalt als Vorspeise oder in Scheiben als Auftakt serviert.

Zutaten


  • Kalbfleisch 110 g

  • Gelatinehaltige Kochbrühe 35 g

  • Zwiebel und Gewürze 5 g


  • Insgesamt: 150 g

    Zubereitung


  • 1. Das Kalbfleisch garen, bis es zart ist, falls es nicht bereits gekocht ist.

  • 2. Die Brühe mit der Zwiebel und den Gewürzen erwärmen, damit sie Aroma annimmt.

  • 3. Das Kalbfleisch mit der Brühenmischung in einer kleinen Form oder Schale zusammengeben.

  • 4. Kalt stellen, bis die Brühe zu einem festen Gelee erstarrt.

  • 5. Aus der Form stürzen oder direkt gut gekühlt servieren.
