  • Postupak


  • 1. Isperite basmati rižu u hladnoj vodi dok voda ne postane gotovo bistra. Dobro ocijedite. Time se uklanja višak površinskog škroba i čuva odvojeno, profinjeno zrno.

  • 2. Stavite rižu u srednje velik lonac s 360 g vode. Zakuhajte na jakoj vatri, zatim smanjite na najslabiju vatru, čvrsto poklopite i kuhajte 10 minuta. Zrna trebaju biti mekana, ali s jasno definiranim središtem, a površina treba izgledati suho.

  • 3. Maknite lonac s vatre i ostavite, poklopljeno, 5 minuta. Otkrijte i nježno rastresite vilicom; riža treba biti lagana, odvojena i potpuno kuhana.

  • 4. Zagrijte massaman curry u malom loncu na srednje jakoj vatri 4 do 5 minuta, povremeno miješajući, dok se ravnomjerno ne pari i ne dobije glatku, sjajnu konzistenciju.

  • 5. Dodajte grašak u curry i kuhajte 2 minute, samo dok se ne zagrije i ostane svijetao i čitav.

  • 6. Stavite rižu žlicom u zdjelicu za posluživanje, zatim zagrabite curry i grašak uz rižu ili preko jedne strane riže. Završno jelo treba biti vruće, uravnoteženo i ne smije biti ni vodenasto ni previše gusto.
