Jambalaya je jelo topline, strukture i suzdržanosti, u kojem riža nosi začine, a svaka komponenta mora ostati jasno odvojena. U ovoj verziji zrno ostaje podatno, meso je izražajno i slasno, a aromatično povrće daje potrebnu dubinu. Juha od rajčice povezuje jelo bez narušavanja njegove discipline.

  • 220 g kuhane riže, po mogućnosti od prethodnog dana i rastresite

  • 90 g piletine i/ili kobasice, kuhane i narezane na komade veličine zalogaja

  • 30 g mješavine paprike, luka i celera, sitno narezane na kockice

  • 10 g začinjene juhe na bazi rajčice


  • Postupak


  • 1. Stavite tavu za pirjanje na srednje jaku vatru. Dodajte mješavinu paprike, luka i celera i zagrijavajte 2 minute, neprestano miješajući, dok ne zamiriše i lagano omekša, ali ne posmeđi.

  • 2. Dodajte piletinu i/ili kobasicu i kuhajte 2 minute, okrećući komade kroz povrće dok površina ne bude vruća, a mješavina ne poprimi pun, slan miris.

  • 3. Dodajte kuhanu rižu i preklapajte je kroz tavu 2 minute, razbijajući eventualne grudice žlicom. Zrna bi se trebala jasno odvajati i upiti aromu povrća i mesa.

  • 4. Ulijte začinjenu juhu na bazi rajčice i nastavite lagano preklapati 1 do 2 minute, samo dok riža ne bude ravnomjerno obložena i potpuno zagrijana. Gotova jambalaya treba biti sočna, ali ne mokra, sa svakim zrnom jasno odvojenim i lagano glaziranim.

  • 5. Maknite s vatre odmah i ostavite da odstoji 1 minutu prije posluživanja. Ova kratka stanka omogućuje da se tekstura stabilizira, a začini povežu.
