  • Postupak



  • 1. Lagano pripremite kalupe ili pladanj i stavite ih nadohvat ruke. U maloj zdjeli pomiješajte modificirani škrob, limunsku kiselinu i mliječnu kiselinu, zatim ih zajedno prosijte kako biste osigurali savršenu raspodjelu.


  • 2. Stavite glukozni sirup i šećer u lonac. Stavite na srednje jaku vatru i miješajte ravnomjerno 4 do 6 minuta, dok se šećer potpuno ne otopi i smjesa ne postane bistra, sjajna i tekuća. Temperatura treba porasti do 112°C.


  • 3. Maknite lonac s vatre. Umiješajte pjenjačom mješavinu škroba i kiselina u ravnomjernom mlazu tijekom 30 do 45 sekundi, zatim dodajte koncentrate voća i povrća te prirodne arome. Masa treba postati malo gušća, ravnomjerno obojena i aromatična.


  • 4. Vratite lonac na vrlo laganu vatru na 2 do 3 minute, neprestano miješajući, dok se smjesa ne zgusne i ne poprimi glatku, elastičnu strukturu. Treba ostati sjajna i izljevna, ne zrnata ni mutna.


  • 5. Umiješajte karnauba vosak i kokosovo ulje izvan vatre tijekom 20 do 30 sekundi, samo dok se potpuno ne sjedine i površina ne izgleda uglađeno. Radite brzo; smjesa će se početi stvrdnjavati kako se hladi.


  • 6. Odmah ulijte u pripremljene kalupe ili pladanj. Poravnajte površinu bez narušavanja strukture slatkiša. Ostavite nepomično na sobnoj temperaturi 2 sata, dok se potpuno ne stvrdne, ne postane elastično i ne može se čisto izvaditi iz kalupa.

    Posložite gumene bombone u suzdržanu skupinu ili u jednu odmjerenu liniju. Završetak treba biti sjajan, oblik precizan, a žvakavost podatna uz čisto kiseli naglasak.
