Uvod


Ameriške palačinke so študija mehkobe in zadržanosti: nežna sredica, rahlo zlato zapečena površina in čista sladkost javorjevega sirupa.   • Postopek


  • 1. Na srednji ogenj postavite 24 cm ponev in jo pustite segrevati 2 minuti. Ponev mora biti enakomerno vroča, ne pa da se kadi.

  • 2. Dodajte 15 g masla in pustite, da se popolnoma stopi ter dno ponve prekrije s tanko, enakomerno plastjo. Maslo naj se nežno peni, ne da bi močno porjavelo.

  • 3. Z žlico naložite 220 g mase za palačinke, da oblikujete palačinke enakomerne debeline. Masa naj ostane zamejena, med posameznimi porcijami pa pustite prostor, če pečete več kot eno hkrati.

  • 4. Pecite 2 do 3 minute na prvi strani, dokler se površina ob robovih ne strdi in se ne pojavijo majhni mehurčki, ki začnejo ostajati odprti. Spodnja stran mora biti bledo zlata.

  • 5. Palačinke previdno obrnite in jih pecite še 1 do 2 minuti na drugi strani, dokler se sredina ob rahlem dotiku ne povrne in barva ni enakomerno zlata.

  • 6. Takoj jih prenesite na topel krožnik. Palačinke morajo biti mehke, vzhajene in v sredici vlažne, brez surove mase v sredini.

  • 7. Tik pred serviranjem po palačinkah z žlico prelijte 25 g javorjevega sirupa, tako da prevleče površino, ne da bi jih preplavil.
