  • Postopek



  • 1. Model obložite s papirjem za peko in vse sestavine stehtajte ločeno. Delajte natančno; struktura ploščice je odvisna od tega, da sta suha in maščobna faza jasno nadzorovani.


  • 2. V majhni kozici na zelo nizki temperaturi, pri 45–50 °C, stopite kakavovo maslo, sončnično olje, kakavovo maso, glicerol in sojin lecitin, dokler zmes ni popolnoma gladka in sijoča. Mešajte le toliko, da masa postane homogena; ne sme se segreti toliko, da izgubi viskoznost.


  • 3. V skledi zmešajte mlečne beljakovine, kolagenski hidrolizat, izomalto-oligosaharide, maltitol, polnomastno mleko v prahu, izolat sojinih beljakovin, pšenično moko in sol. Sejanje ni potrebno, vendar morajo biti praški enakomerno porazdeljeni brez vidnih grudic.


  • 4. Med mešanjem prelijte toplo maščobno fazo čez suhe sestavine. Z lopatico mešajte 1–2 minuti, dokler ne nastane gosta, oblikovalna masa. Konsistenca mora biti mehka, vendar ne tekoča, z enakomerno, mat površino.


  • 5. Na koncu nežno vmešajte sojine crispe, le toliko, da so enakomerno porazdeljeni. Hrustljavi del mora ostati cel in jasno zaznaven v strukturi.


  • 6. Maso močno in enakomerno vtisnite v pripravljen model. Posebej jo stisnite v vogalih in ob robovih, da bo ploščica gosta, gladka in brez zračnih žepkov. Površina mora biti ravna in čvrsta.


  • 7. Model hladite 10 minut, dokler ploščica ni dovolj stabilna, da jo lahko dvignete ven v enem kosu. Končna tekstura mora biti čvrsta, vendar se mora ob pritisku še rahlo vdati, z jasno hrustljavostjo v prerezu.


  • Serviranje in postrežba



    Ploščico položite na čist list papirja za peko ali na majhen krožniček. Postrezite jo celo ali prerezano na pol, tako da čist rez pokaže enakomerno mlečno osnovo in hrustljave sojine crispe.
