  • 180 g kuhanih testenin rotini

  • 70 g bazilikinega pesta

  • 10 g oljčnega olja

  • 140 g pečenega piščančjega stegna s kožo

  • 10 g parmezana, drobno naribanega


  • Postopek


  • 1. Če je bilo pečeno piščančje stegno ohlajeno, ga pustite 10 minut na sobni temperaturi. Tako se bo koža enakomerno ponovno zahrustala, meso pa se bo ogrelo, ne da bi se izsušilo.


  • 2. Težko ponev postavite na srednji ogenj in dodajte oljčno olje. Ko se olje zalesketa, položite piščančje stegno v ponev s kožo navzdol. Rahlo pritisnite za 1 minuto, da zagotovite popoln stik s ponvijo, nato pecite 4 do 6 minut, dokler koža ni temno zlata, slišno hrustljava in se maščoba ni čisto izločila. Stegno obrnite in meso segrevajte 2 minuti. Preložite na krožnik in ohranite toplo.


  • 3. V mešalni skledi združite kuhane rotine z bazilikinim pestom. Mešajte 30 do 45 sekund, dokler ni vsak zavoj enakomerno prevlečen s tankim slojem. Testenine morajo ostati voljne in ločene, ne sprijete ali mastne.


  • 4. Če so se testenine ohladile, jih vrnite v toplo ponev za 30 do 60 sekund na nizkem ognju in jih nežno premešajte, le toliko, da se pregrejejo. Ne dovolite, da pesto potemni.


  • 5. Rotine naložite v urejen kupček na sredino toplega servirnega krožnika. Piščančje stegno čisto narežite na 3 ali 4 kose in jih razporedite ob testeninah ali rahlo čeznje, pri tem pa pustite hrustljavo kožo vidno.


  • 6. Zaključite s parmezanom in ga enakomerno potresite po testeninah ter ob robu piščanca, medtem ko je jed še topla. Postrezite takoj.


  • Serviranje in postavitev na krožnik


    Testenine oblikujte v urejen osrednji kupček, piščanca pa položite premišljeno, tako da hrustljava koža ostane vidna. Končni krožnik mora delovati uravnoteženo in disciplinirano: sijoče zelene testenine, bronasto zapečen piščanec in rahel posip parmezana.
