  • 220 g grilovanog goveđeg odreska

  • 180 g pečenog krompira

  • 20 g chimichurri sosa

  • 10 g tradicionalnog sosa


  • Postupak



  • 1. Pripremite krompir.

  • Zagrejte rernu na 220°C. Stavite 180 g pečenog krompira na pleh za pečenje i pecite 30 do 40 minuta, u zavisnosti od veličine, dok kora ne bude suva, a sredina potpuno popusti pod vrhom noža. Unutrašnjost treba da bude rastresita i potpuno mekana, bez otpora u sredini.

  • 2. Ispecite govedinu.

  • Po potrebi lagano začinite 220 g goveđeg odreska prema referenci jela, zatim ga pecite na roštilju na jakoj vatri 2 do 4 minuta sa svake strane, u zavisnosti od debljine, dok spolja ne dobije duboku smeđu boju i ne bude pečen do željenog stepena. Za medium-rare izvadite odrezak na unutrašnjoj temperaturi od 52°C do 54°C; za medium izvadite na 57°C do 60°C. Ostavite da odmori 5 minuta kako bi se sokovi slegli, a meso opustilo.

  • 3. Zagrejte sosove.

  • Dovedite 20 g chimichurri sosa i 10 g tradicionalnog sosa na sobnu temperaturu ili ih vrlo blago zagrevajte 1 do 2 minuta ako treba da se služe blago topli. Treba da ostanu tečni i živih aroma, ne toliko topli da im se ublaži karakter.

  • 4. Završite krompir.

  • Rasecite pečeni krompir po dužini. Blago ga otvorite vrhom noža kako bi unutrašnjost ispustila paru i rastresla se. Unutrašnjost treba da ostane celovita, ali mekana, sa suvom, rastresitom teksturom, a ne vlažnom.

    Stavite pečeni krompir blago van centra na zagrejan tanjir i položite grilovani odrezak pored njega, tako da zapečena površina ostane vidljiva. Kašikom prelijte chimichurri preko govedine ili pored nje, a zatim završite tradicionalnim sosom kao uzdržanim akcentom. Tanjir treba da deluje uravnoteženo i promišljeno: meso prvo, krompir drugo, sosovi kao završna svetla nota.
