  • 1. Stavite jikamu na dasku za sečenje i potpuno uklonite debelu spoljašnju koru, otkrivajući bledo meso ispod nje. Odsecite sve suve ili vlaknaste ivice kako bi površina bila čista i ravna.


  • 2. Isecite jikamu na ujednačene štapiće, svaki debljine oko 1 cm i dužine 6 do 8 cm. Neka rezovi budu precizni kako bi komadi imali uredan, dosledan oblik i pružali čist, hrskav zagriz.


  • 3. Poređajte štapiće u jednom sloju na poslužavnik ili ohlađeni tanjir. Stavite u frižider na 10 minuta, tek toliko da se meso učvrsti i tekstura postane izraženija.
