  • Metode


  • 1. Berei ’n klein vorm met bakpapier voor. Weeg al die bestanddele presies af en hou hulle apart volgens komponent.


  • 2. Meng melkproteïen, kollageenhidrolisaat, polidekstrose, maltitol, gliserol, natuurlike geurmiddels en sout in ’n bak. Werk die massa met ’n spatel vir 2–3 minute totdat dit egalig, dig en samehangend is. Dit moet vormbaar wees, maar nie klewerig nie.


  • 3. Vou die sojaproteïenbros in en werk baie kort, ongeveer 15 sekondes, sodat die bros eweredig versprei word sonder om te breek.


  • 4. Druk die massa stewig in die vorm tot ’n egalige staaf van ongeveer 55 g. Druk veral in die hoeke sodat die oppervlak glad en kompak word. Verkoel vir 10 minute totdat dit ferm en elasties voel.


  • 5. Smelt die melksjokoladebedekking, palmpitolie en kakaobotter versigtig oor lae hitte tot ’n heeltemal gladde massa, ongeveer 40–45 °C. Roer die kakao in totdat die glanslaag blink en egalig is. Dit moet vloeibaar wees, maar nie warm genoeg om die kern sag te maak nie.


  • 6. Haal die staaf uit die vorm en bedek dit egalig met die sjokolademassa. Laat die oormaat kortliks afdrup sodat die oppervlak dun en netjies bly. Plaas die staaf op papier en laat dit vir 5–7 minute set totdat die bedekking ferm en droog is om aan te raak.


  • Uitplasing en bediening


    Bedien die staaf heel, met die gladde sjokolade-oppervlak na bo en ’n skoon snit slegs indien dit gedeel word. Dit moet ’n duidelike weerstand in die dop gee, gevolg deur ’n sagte, romerige kern en ’n subtiele brosheid in die middel.
