Jambalaya is ’n gereg van hitte, struktuur en selfbeheersing, waar rys die geurmiddels dra en elke komponent onderskeibaar moet bly.   • 220 g gaar rys, verkieslik van die vorige dag en los

  • 90 g hoender en/of wors, gaar en in happiegrootte stukke gesny

  • 30 g soetrissie-, ui- en selderymengsel, fyn in blokkies gesny

  • 10 g tamatiegebaseerde geur-bouillon


  • Metode


  • 1. Plaas die soteerpan oor matige hitte. Voeg die soetrissie-, ui- en selderymengsel by en verhit vir 2 minute terwyl jy aanhoudend roer, totdat dit geurig en liggies sag is maar nie verbruin nie.

  • 2. Voeg die hoender en/of wors by en kook vir 2 minute, terwyl jy die stukke deur die groente keer totdat die oppervlak warm is en die mengsel hartig en afgerond ruik.

  • 3. Voeg die gaar rys by en vou dit vir 2 minute deur die pan, en breek enige klonte met die lepel op. Die korrels moet skoon van mekaar skei en die aroma van die groente en vleis aanneem.

  • 4. Giet die tamatiegebaseerde geur-bouillon in en hou aan vou vir 1 tot 2 minute, net totdat die rys egalig bedek en deurwarm is. Die voltooide jambalaya moet klam maar nie nat wees nie, met elke korrel onderskeibaar en liggies geglasuur.

  • 5. Verwyder onmiddellik van die hitte en laat vir 1 minuut staan voordat jy opdien. Hierdie kort rus laat die tekstuur setel en die geurmiddels integreer.


  • Uitplatering en bediening


    Skep die jambalaya in die middel van ’n warm vlak bak of bord, en hou die rande skoon. Vorm dit liggies eerder as om dit saam te druk, sodat die rys lugtig bly en die vleis oral sigbaar is. Bedien onmiddellik terwyl die korrels warm en los is.
