  • Metode



  • 1. Dep die salmfilet droog met kombuispapier. Die oppervlak moet vry van vog wees sodat die vis netjies skroei en die glasuur egalig kleef.


  • 2. Verhit die kookolie in die soteerpan oor medium-hoë hitte vir 1 minuut, totdat die olie glinster en vrylik oor die pan beweeg.


  • 3. Plaas die salm in die pan met die aanbiedingskant na onder. Gaar vir 3 minute sonder om dit te beweeg, totdat die onderkant diep goudbruin is en skoon van die pan loskom.


  • 4. Draai die salm om en gaar vir 2 minute aan die tweede kant. Die vleis moet net ondeursigtig aan die rande wees en steeds effens deurskynend in die middel.


  • 5. Voeg die aromate en geurmiddels by die pan en roer dit kortliks in die warm olie vir 15 tot 20 sekondes, net totdat dit geurig is.


  • 6. Voeg die sojagebaseerde Hong Kong-styl sous by en skep dit voortdurend vir 1 minuut oor die salm. Die sous moet ligweg reduseer en die vis met ’n glansende, gekonsentreerde laag bedek.


  • 7. Verwyder die pan van die hitte en laat die salm vir 1 minuut in die glasuur rus. Die vleis moet tot ’n klam, sagte afwerking met ’n delikate vlok set.

    Plaas die salm effens uit die middel op ’n warm bord en skep die oorblywende glasuur daaroor. Bied dit aan met ’n skoon rand en ’n sigbare glans, sodat die sous die vis omraam eerder as om dit te begrawe.
