Dit is 'n saamgestelde oondbak met skoon lyne en stille rykheid: salm teenoor die suurheid van tamatie, die groen varsheid van spinasie, en die sagte struktuur van hawer. Salm, sonder vel, in 1 groot stuk gesny: 150 g
Tamaties, ryp, in blokkies gesny: 100 g
Spinasie, gewas en goed gedreineer: 60 g
Hawer: 60 g
Kaas, fyn gerasper: 50 g

Metode



  • 1. Verhit die oond tot 190°C. Maak die bakskottel liggies warm in die oond terwyl jy die bestanddele voorberei; 'n warm skottel help dat die oondbak eweredig aan die rande stol.


  • 2. Plaas die hawer in die klein kastrol met 120 g water. Bring dit oor matige hitte tot 'n sagte prut en kook vir 4 tot 5 minute, terwyl jy gereeld roer, totdat die hawer die water geabsorbeer het en 'n dik basis gevorm het wat met 'n lepel geskep kan word. Verwyder van die hitte.


  • 3. Voeg die spinasie by die warm hawer en roer vir 30 tot 45 sekondes, net totdat dit verlep en glansend word. Vou die tamaties in en meng kortliks sodat dit eweredig versprei is sonder om heeltemal inmekaar te sak.


  • 4. Skep die hawermengsel in die warm bakskottel en maak dit gelyk met die agterkant van die lepel. Plaas die salm bo-op in 'n enkele stuk. Geen geurmiddels word hier bygevoeg nie; die gereg moet skoon en reguit in geur bly.


  • 5. Strooi die kaas eweredig oor die salm en die blootgestelde oppervlak van die hawermengsel. Bak vir 18 tot 20 minute, totdat die kaas gesmelt en plek-plek ligbruin is, die tamaties aan die rande borrel, en die salm ondeursigtig is tot in die middel met net 'n dowwe deurskynendheid by die dikste punt.


  • 6. Haal uit die oond en laat vir 3 minute rus. Die oondbak moet set in 'n ferm, samehangende tekstuur wat in skywe gesny kan word eerder as 'n los kasserol.


  • Uitleg en bediening



    Bedien direk uit die bakskottel of skep 'n porsie op 'n warm bord in een netjiese gedeelte, met die salm wat op die hawerbasis rus. Die voltooide gereg moet as gelaag en saamgestel voorkom: klam vis, sagte tamatie, sagte spinasie, en 'n kompakte hawerfondasie wat deur 'n dun, goue kaaskors gebind word.
