Æg, 50 g
Mayonnaise, 20 g

Fremgangsmåde


  • 1. Slå ægget ud i en lille skål, og krydr det med sort peber. Pisk kun, til blomme og hvide er helt samlet, cirka 10 sekunder; blandingen skal være ensartet, men ikke skummende.


  • 2. Sæt en lille nonstick-stegepande over middel-lav varme, og tilsæt smørret. Når smørret er smeltet, og skumdannelsen aftager, hældes ægget på panden. Rør langsomt og konstant i 1 til 2 minutter, så ostemassen forbliver små og bløde. Ægget skal forblive mørt, blankt og netop sat, uden synlig væske.


  • 3. Flyt straks ægget over på en tallerken, og bred det forsigtigt ud, så det kan køle af i 1 minut. Dette forhindrer eftertilberedning og bevarer en delikat tekstur.


  • 4. Læg det hvide brød på et bræt, og skær alle skorper rent af. Smør mayonnaisen jævnt på den ene side af hver skive, og brug hele den afmålte mængde.


  • 5. Læg det varme æg på den ene skive, og fordel det i et jævnt lag helt ud til kanterne. Luk med den anden skive, med mayonnaisesiden indad, og tryk let for at samle uden at presse brødet sammen.


  • 6. Skær om nødvendigt sandwichen pænt til i den ønskede form, og hold kanterne rene og firkantede. Den færdige sandwich skal føles blød, samlet og give let efter ved berøring.


  • Anretning og servering


    Server sandwichen straks på en enkel tallerken, skåret rent for en præcis præsentation. Brødet skal forblive lyst og mørt, fyldet centreret og jævnt, med peberen som en fin, diskret afslutning.
