  • Fremgangsmåde


  • 1. Kom vand, brun farin, smør, kanel og kardemomme i gryden. Sæt den over middel varme, og rør i 1 minut, lige indtil sukkeret er opløst, og smørret er emulgeret til en let blank sirup.

  • 2. Tilsæt pære- og æblebådene i så vidt muligt ét lag. Bring væsken til en sagte simren, læg låg på, og lad det koge ved lav varme i 8 minutter.

  • 3. Tag låget af, og fortsæt tilberedningen i 3 til 4 minutter, mens du vender frugten én gang, indtil pæren er mør i kanten, men stadig holder formen, og æblet er blødt uden at falde fra hinanden. Siruppen skal lægge sig let om frugten og virke reduceret, ikke klistret.

  • 4. Tag gryden af varmen, og lad den stå i 1 minut, så frugten falder til ro, og glaseringen sætter sig en smule.

    Anret pære og æble pænt i en varm serveringsskål. Hæld den krydrede sirup over og omkring frugten, så hvert stykke får et let blankt lag frem for at være dækket helt. Server varm, med frugten intakt og saucen klar og aromatisk.
