Sissejuhatus


See on kompott oma kõige distsiplineeritumas vormis: puuvili on pehmendatud vaid nii palju, et vabastada mahlad, säilitades samal ajal kuju ja kirkuse. Jahutatult serveerituna pakub see raskepärasuse asemel selgust, kus marjade loomulik aroom juhib iga suutäit. Tulemuseks peaks olema läikiv, kergelt siirupine ja maitselt puhas kompott.

  • 150 g segamarju


  • Valmistamine


  • 1. Pane marjad väikese paksupõhjalise kastruli sisse keskmisele kuumusele. Kuumuta 2 minutit, üks või kaks korda segades, kuni marjad hakkavad läikima ja eraldavad väikese koguse mahla.

  • 2. Jätka küpsetamist 4 kuni 6 minutit, aeg-ajalt õrnalt segades, kuni puuvili pehmeneb ja mahlad redutseeruvad kergeks läikivaks siirupiks. Osa marju peaks jääma terveks; kompott ei tohiks laguneda püreeks.

  • 3. Kui soovid siledamat tulemust, suru kompott veel soojana läbi peenesilmse sõela, vajutades vaid kergelt, just nii palju, et puuviljamahlad vabaneksid. Rustikaalsema tulemuse jaoks jäta see nii, nagu on.

  • 4. Tõsta kohe kaussi ja lase 5 minutit jahtuda. Kompott peaks muutuma lusikaga tõstetava konsistentsiga, kus puuvili on õrn ja siirup kergelt paksenenud.
