Ovo je studija suzdržanosti: zemljasta leća, svilenkast špinat i tiha dubina maslinova ulja spojeni na odgovarajućoj temperaturi. Jelo se oslanja na čistu pripremu i disciplinjeno začinjavanje isključivo tehnikom, tako da svaki element ostaje zaseban, dok cjelina djeluje zaokruženo.   • Postupak


  • 1. Stavite kuhanu leću u lonac srednje veličine i zagrijavajte je na laganoj vatri 4 do 5 minuta, promiješavši jednom ili dvaput, dok ne bude potpuno topla i više nema rashlađenu sredinu.

  • 2. Stavite veliku tavu za pirjanje na srednju vatru i dodajte 20 g maslinova ulja. Kad ulje lagano zatreperi, dodajte špinat u rahli sloj.

  • 3. Neprestano prebacujte špinat 1 do 2 minute, samo dok ne uvene i ne postane sjajan, ali da i dalje ostane živo zelen i nježan, a ne mekan i bezizražajan.

  • 4. Dodajte zagrijanu leću u tavu i nježno je umiješajte sa špinatom 1 minutu, kako bi leća upila ulje, a sokovi iz špinata je ravnomjerno obložili.

  • 5. Maknite tavu s vatre i dodajte preostalih 10 g maslinova ulja. Lagano promiješajte dok jelo ne izgleda podatno i lagano glazirano, s odvojenim zrnima leće i ravnomjerno raspoređenim špinatom.

    Prebacite leću i špinat u toplu plitku zdjelu ili na tanjur. Oblikujte smjesu u nizak, uredan humak i završite sokovima od kuhanja razvučenima po dnu kako bi jelo ostalo sočno i elegantno.
