Ovo je suzdržana slana zdjela izgrađena na kontrastu: kremasta zob, svijetla brokula, meko kuhano jaje i hladna kiselost jogurta.   • 1. Zakuhajte 240 g vode do laganog vrenja u malom loncu. Dodajte 80 g zobenih pahuljica i kuhajte na laganoj vatri 6 do 8 minuta, često miješajući, dok zob ne omekša i postane kremasta, ali i dalje zadrži blagu pojedinačnu teksturu. Smjesa treba biti dovoljno rahla da se može zagrabiti žlicom, ne gusta i kruta.


  • 2. Dok se zob kuha, zakuhajte vodu u srednjem loncu. Dodajte 140 g brokule i kuhajte 2 do 3 minute, dok ne postane živo zelena i tek mekana pri stapci. Odmah ocijedite i držite toplim. Cvjetići trebaju ostati cijeli i lagano hrskavi.


  • 3. U zasebnoj posudi sa vodom koja lagano vrije kuhajte 100 g jaja 6 minuta za mekani žumanjak ili 7 minuta za malo čvršću sredinu. Odmah prebacite u hladnu vodu na 1 minutu, zatim pažljivo ogulite. Bjelanjci trebaju biti kuhani, a žumanjci podatni.


  • 4. Žlicom rasporedite zob u zdjelu za posluživanje i oblikujte je u glatku podlogu. Rasporedite brokulu preko jedne strane zdjele, pazeći da cvjetići ostanu odvojeni.


  • 5. Stavite jaja na vrh ili malo izvan središta, zatim dodajte 100 g jogurta u urednoj kupici ili glatkom sloju pokraj zobi. Poslužite odmah dok je zob topla, a jogurt ostaje hladan.
