  • 180 g kuhane tjestenine rotini

  • 70 g pesta od bosiljka

  • 10 g maslinova ulja

  • 140 g pečenog pilećeg zabatka s kožom

  • 10 g parmezana, sitno naribanog


  • Postupak


  • 1. Ostavite pečeni pileći zabatak na sobnoj temperaturi 10 minuta ako je bio ohlađen. To omogućuje da koža ponovno ravnomjerno postane hrskava, a meso se zagrije bez isušivanja.


  • 2. Stavite tešku tavu na srednju vatru i dodajte maslinovo ulje. Kad ulje zatreperi, stavite pileći zabatak u tavu kožom prema dolje. Lagano pritisnite 1 minutu kako biste osigurali puni kontakt, zatim pecite 4 do 6 minuta dok koža ne postane tamnozlatna, jasno hrskava i dok se masnoća ne istopi kako treba. Okrenite zabatak i zagrijavajte meso 2 minute. Prebacite na tanjur i držite na toplom.


  • 3. U zdjeli za miješanje pomiješajte kuhane rotine s pestom od bosiljka. Miješajte 30 do 45 sekundi dok svaka spirala ne bude obložena tankim, ravnomjernim slojem. Tjestenina treba ostati podatna i odvojena, ne slijepljena ni masna.


  • 4. Ako se tjestenina ohladila, vratite je u toplu tavu na laganu vatru na 30 do 60 sekundi, lagano miješajući, samo dok se ne zagrije. Ne dopustite da pesto potamni.


  • 5. Oblikujte rotine u uredan humak na sredini toplog tanjura za posluživanje. Čisto narežite pileći zabatak na 3 ili 4 komada i rasporedite ga uz tjesteninu ili djelomično preko nje, tako da hrskava koža ostane vidljiva.


  • 6. Završite parmezanom tako da ga ravnomjerno pospete po tjestenini i rubu piletine dok je jelo još toplo. Poslužite odmah.

    Složite tjesteninu u uredan središnji humak i postavite piletinu promišljeno, tako da hrskava koža ostane vidljiva. Završni tanjur treba djelovati uravnoteženo i disciplinirano: sjajna zelena tjestenina, brončano pečena piletina i lagani snježni posip parmezana.
