  • White chocolate chips, 180 g


  • Metode



  • 1. Letakkan white chocolate chips dalam mangkuk tahan panas yang diletakkan di atas panci berisi air yang hampir mendidih perlahan. Aduk perlahan dan terus-menerus selama 3 hingga 5 menit, sampai cokelat benar-benar meleleh dan halus, tanpa butiran yang terlihat atau bagian yang belum meleleh. Teksturnya harus mengilap dan cair, tidak panas.


  • 2. Angkat mangkuk dari panas dan diamkan cokelat selama 2 menit, aduk sekali atau dua kali. Cokelat harus tetap bisa dituang tetapi mulai sedikit mengental di bagian tepinya.


  • 3. Bagi cokelat leleh secara merata ke dalam 4 gelas saji kecil atau ramekin, masing-masing 45 g per porsi. Ratakan permukaannya dengan bagian belakang sendok agar setiap porsi membentuk hasil akhir yang rapi dan rata.


  • 4. Dinginkan selama 45 hingga 60 menit, sampai permukaannya set dan bagian dalamnya cukup padat untuk mempertahankan bentuknya sambil tetap lembut di lidah.

    Sajikan dingin dalam wadah tempat mousse mengeras. Permukaannya harus halus dan pucat, dengan tepi yang rapi dan bagian tengah yang lembut serta mudah luruh.
