Uvod


Ta pica temelji na zadržanosti: voljno testo, čista paradižnikova osnova, mlečna mocarela in odmerjen zaključek z oljčnim oljem.   • 1. Pečico segrejte na 250°C. Če uporabljate kamen za pico, ga med segrevanjem postavite v pečico in pustite vsaj 30 minut, da se popolnoma pregreje. Pečica mora biti pred peko povsem segreta.


  • 2. Na rahlo pomokani površini raztegnite 220 g testa za pico v krog enakomerne debeline, pri čemer pustite nekoliko debelejši rob. Osnova mora biti voljna in raztegljiva, ne strgana ali stisnjena.


  • 3. Testo prenesite na lopar, pekač, obložen s papirjem za peko, ali na predhodno segreto površino za peko. 60 g paradižnikove omake enakomerno razporedite po sredini, pri tem pa ob robu pustite čist pas širok približno 1 do 2 cm.


  • 4. 100 g mocarele enakomerno razporedite po omaki, nato zadržano dodajte 25 g oblog, da površina ostane uravnotežena in testo ni preobloženo.


  • 5. Po pici v tankem, enakomernem sloju pokapajte 15 g oljčnega olja.


  • 6. Pecite 10 do 12 minut, dokler skorja ni lepo vzhajana, spodnja stran zlato zapečena, mocarela pa popolnoma stopljena in mestoma rahlo porjavela. Rob mora biti pri dnu hrustljav, znotraj pa nežen.


  • 7. Pico vzemite iz pečice in jo pred rezanjem pustite počivati 1 minuto. Ta kratek premor omogoči, da se površina umiri in sir lepo obstane.


  • Serviranje


    Pico prenesite na desko ali topel krožnik in jo postrezite takoj, narezano na enakomerne kose. Končna predstavitev mora pokazati jasno izražen rob, sijočo površino in uravnoteženo razporeditev obloge brez pretiravanja.
