  • Postopek



  • 1. Majhen model za ploščico obložite s papirjem za peko in ga postavite na stran. Model naj sprejme končno ploščico teže 44 g z jasnimi robovi in kompaktno obliko.


  • 2. V majhni skledi združite proteinsko mešanico, topno koruzno vlaknino in sesekljane mandlje. Temeljito premešajte, da se mandlji enakomerno porazdelijo po suhi osnovi.


  • 3. Dodajte vodo in jo z lopatko vdelajte, dokler zmes ne postane čvrsta, povezana pasta. Ob pritisku se mora držati skupaj, brez suhih delov.


  • 4. V majhni toplotno odporni skledi nad nežno toploto skupaj stopite eritritol, olje palmovih jedrc, kakavovo maslo, naravne arome, sončnični lecitin in morsko sol ter mešajte, dokler zmes ni gladka in povsem povezana. Zmes mora biti tekoča, sijoča in brez zrnate teksture.


  • 5. Toplo vezivo prelijte čez proteinsko osnovo in hitro ter odločno premešajte, da se masa enakomerno obda in postane rahlo lepljiva. Zmes vtisnite v pripravljen model v enem sloju in jo močno stisnite, da odstranite zračne žepe. Površina mora biti ravna in kompaktna.


  • 6. Model vrnite v hladilnik za 10 minut oziroma dokler ploščica ni strjena in čvrsta na dotik.


  • 7. Za zaključni sloj skupaj stopite olje palmovih jedrc in kakavovo maslo, dokler zmes ni bistra in tekoča. Ohlajeno ploščico premažite ali s čopičem nanesite tanek, enakomeren sloj, nato jo vrnite v hladilnik za 5 minut, da se površina strdi in postane rahlo hrustljava.


  • 8. Ploščico previdno vzemite iz modela. Končna tekstura mora biti na zunanjosti čvrsta, z gladkim rezom, v sredici pa rahlo popustljiva, z nadzorovano hrustljavostjo zaradi mandljev.
