Ova testenina zasniva se na nenametljivom bogatstvu avokada i čistoj zelenoj dubini spanaća.   • 120 g suve testenine

  • 10 g maslinovog ulja

  • Priprema


  • 1. U šerpi srednje veličine zagrejte vodu do punog ključanja. Dodajte testeninu i kuvajte 8 do 10 minuta, ili dok ne omekša, ali da u sredini i dalje ostane blago čvrsta. Dobro ocedite, sačuvavši malu količinu vode od kuvanja ako bude potrebno za razređivanje sosa.

  • 2. Dok se testenina kuva, stavite spanać u veliki tiganj za sotiranje na srednju temperaturu. Mešajte 1 do 2 minuta, samo dok potpuno ne uvene i ne postane tamnozelen. Odmah prebacite u blender.

  • 3. Dodajte avokado i 20 g maslinovog ulja u spanać. Blendajte dok smesa ne postane potpuno glatka i svetlozelena, po potrebi sastružite stranice posude. Sos treba da bude gust, sjajan i ujednačen.

  • 4. Vratite oceđenu testeninu u topao tiganj za sotiranje. Dodajte 10 g maslinovog ulja i kratko promešajte na tihoj vatri 30 sekundi da se testenina ravnomerno obloži.

  • 5. Dodajte sos od avokada i spanaća u testeninu i lagano promešajte 1 minut na tihoj vatri dok se testenina potpuno ne obloži i sos ne zagreje. Ako je sos pregust, razredite ga malom količinom sačuvane vode od kuvanja. Gotova testenina treba da bude svilenkasta i da lagano prijanja uz svaki rezanac ili oblik.

    Uvijte ili složite testeninu u toplu plitku činiju, ravnomerno raspoređujući sos po površini. Poslužite odmah, dok je sos i dalje sjajan, a boja živa.
