  • 1. Izvadite govedinu iz frižidera i ostavite je da stoji na sobnoj temperaturi 20 minuta. Površina treba da izgubi hladnoću, dok meso ostaje čvrsto i suvo na dodir.

  • 2. Stavite težak tiganj na jaku vatru i ostavite da se dobro zagreje, oko 2 minuta. Tiganj treba da bude dovoljno vruć da govedina zacvrči odmah pri dodiru.

  • 3. Dodajte govedinu u suv tiganj i pecite je bez pomeranja 2 do 3 minuta sa prve strane. Okrenite jednom i pecite drugu stranu još 2 do 3 minuta. Spoljašnjost treba da bude duboko zapečena i aromatična, sa jasno formiranom koricom.

  • 4. Smanjite vatru na srednju i nastavite pečenje, okrećući po potrebi, još 2 do 3 minuta, dok govedina ne bude elastična na dodir, ali i dalje blago popušta pod pritiskom. Za medium-rare rezultat, sredina treba da ostane topla i crvena do ružičasta.

  • 5. Prebacite govedinu na tanjir i ostavite da odmori 5 minuta. Sokovi treba da se vrate u meso, a površina da ostane sjajna, a ne mokra.

  • 6. Po želji, vratite govedinu nakratko u tiganj na 15 do 20 sekundi sa svake strane da osvežite koricu pre serviranja. Unutrašnjost treba da ostane mekana i izbegnite prepečenje.
