  • Metode


  • 1. Voer ’n klein stafievorm met bakpapier uit, en laat genoeg oorhang sodat die stafie netjies opgelig kan word sodra dit gestol het. Hou die vorm gereed voordat die vulsel gemeng word.


  • 2. Meng die melkproteïenmengsel, kollageenhidrolisaat, gliserol, polidekstrose, palmpitolie, kakaobotter en natuurlike geurmiddel in ’n hittebestande bak. Meng met ’n silikoonspatel vir 2 tot 3 minute totdat die massa glad, dig en egalig gehidreer is. Die mengsel moet bymekaar hou sonder om droog of korrelig te lyk.


  • 3. Vou die sojapofies met kort, beheerde bewegings in, net genoeg om dit te versprei sonder om hul struktuur te vergruis. Die vulsel moet kompak en effens klewerig bly.


  • 4. Druk die vulsel stewig in die voorbereide vorm in en maak die oppervlak gelyk met die spatel. Komprimeer dit goed sodat die stafie netjies sny en byt. Verkoel vir 15 minute, totdat dit ferm voel.


  • 5. Smelt die melksjokoladebedekking saam met die kakaobotter oor sagte hitte, en roer totdat dit heeltemal vloeibaar en glansend is. Die bedekking moet glad en warm wees, nie warm genoeg om te brand nie.


  • 6. Haal die verkoelde stafie uit die vorm en plaas dit op bakpapier. Bedek dit egalig met die sjokoladebedekking, en gebruik die spatel om oortollige sjokolade weg te vee en ’n dun, gepoleerde dop te skep. Laat dit vir 5 minute by kamertemperatuur staan en verkoel dit dan vir 10 minute totdat die bedekking heeltemal gestol en liggies bros is.

    Bedien die stafie heel op ’n eenvoudige bord of sny dit in netjiese segmente met ’n warm, droë mes. Die eindresultaat moet ’n bros sjokoladebuitekant, ’n romerige binnekant en sigbare tekstuurkontras van die sojapofies toon.
