  • 120 g basmatiris

  • 2 g salt

  • 260 g vand

  • 80 g skinke, skåret i tern på 5 mm

  • 8 g vegetabilsk olie

  • 1 g sort peber

  • 1 g salt


  • Fremgangsmåde


  • 1. Skyl basmatirisen i flere hold koldt vand, indtil vandet er næsten klart. Lad den dryppe godt af i en si i 2 minutter. Dette fjerner overskydende stivelse fra overfladen og bevarer tydeligt adskilte korn.

  • 2. Kom ris, 2 g salt og 260 g vand i gryden. Bring det i svag kog ved middel varme, læg straks låg på, og skru ned til laveste varme. Kog i 12 minutter uden at løfte låget.

  • 3. Tag gryden af varmen, og lad den hvile tildækket i 8 minutter. Kornene skal være møre, adskilte og fuldt hydrerede, uden synligt vand tilbage i gryden.

  • 4. Mens risene hviler, opvarmes den vegetabilske olie i stegepanden ved middel varme. Tilsæt skinketernene, og steg dem i 4 til 5 minutter under omrøring af og til, indtil kanterne er brunede og let sprøde.

  • 5. Krydr skinken med 1 g salt og 1 g sort peber. Rør i 15 sekunder, så det fordeles jævnt, og tag derefter panden af varmen.

  • 6. Løsn risene forsigtigt med en gaffel, og vend derefter skinken og eventuel stegesky fra panden i. Bland kun, til det er jævnt fordelt; kornene skal forblive hele og adskilte.


  • Anretning og servering


    Anret risene let toppet i en varm, lav skål eller på en tallerken, så skinken er synlig hele vejen igennem i stedet for at synke ned i en kompakt masse. Den færdige ret skal fremstå som rene, adskilte korn med indslag af sprøde, velsmagende tern.

    Brug en gryde med tætsluttende låg; kontrol over dampen er afgørende for risenes tekstur. Rør ikke for meget, når skinken er tilsat, ellers vil kornene knække, og retten vil miste sin klarhed.
