En klassisk anrettet fiskeret med mør torsk serveret med en smørholdig beurre blanc og rødvinsreduktion samt blomkål og forårsgulerødder. Sammensætningen er elegant og franskinspireret med en fyldig saucebalance mod den milde hvide fisk.

Ingredients


  • Torsk: 170 g

  • Blomkål: 90 g

  • Beurre blanc: 45 g

  • Rødvinsreduktion: 20 g

  • Forårsgulerødder: 55 g

  • Smør: 10 g


  • Instructions


  • 1. Krydr torsken let, og tilbered den forsigtigt, til den netop er ugennemsigtig og flager.

  • 2. Damp eller blancher blomkålen, til den er mør, og varm den derefter med lidt af smørret.

  • 3. Tilbered forårsgulerødderne, til de er møre med bid, og glaser dem derefter let med resten af smørret.

  • 4. Anret blomkålen og gulerødderne som grøntsagsbund.

  • 5. Læg torsken ovenpå eller ved siden af grøntsagerne.

  • 6. Ske beurre blanc over torsken, og afslut med rødvinsreduktionen rundt på tallerkenen.
