  • 180 g batata, oguljenog i narezanog na jednake kocke od 2 cm

  • 1. Zagrijte pećnicu na 200°C. Obložite lim za pečenje i rasporedite batat u jednom sloju. Pecite 20 do 25 minuta, jednom okrenite na polovici pečenja, dok rubovi lagano ne karameliziraju, a sredina ne omekša bez tvrdog središta.


  • 2. Dok se batat peče, pripremite kremu od banane i avokada. Stavite bananu i avokado u blender ili multipraktik i miksajte dok smjesa ne postane potpuno glatka, svijetla i dovoljno gusta da zadrži mekani trag. Tekstura treba biti kremasta, ne prozračna ni rijetka.


  • 3. Losos lagano posolite po želji, zatim ga stavite u mali lonac s tek toliko vode da dopire do polovice njegove visine. Zakuhajte do vrlo laganog vrenja na srednje jakoj vatri, zatim smanjite na laganu vatru i poširajte 6 do 8 minuta, ovisno o debljini, dok meso ne postane neprozirno i ne počne se odvajati u sočne listiće, a tek nestane prozirnost u sredini.


  • 4. Pažljivo izvadite losos i pustite da se kratko ocijedi. Površina treba ostati sjajna i netaknuta, ne raspadnuta ni suha.


  • 5. Rasporedite pečeni batat na dno tople zdjele. Uz njega položite losos u urednim, izdašnim komadima. Žlicom stavite kremu od banane i avokada u glatkom luku ili u obliku quenelle pokraj ribe, pazeći da svaka komponenta ostane jasno odvojena.
