  • Cara membuat



  • 1. Masukkan kompot aneka beri ke dalam panci kecil di atas api kecil dan hangatkan perlahan selama 2 hingga 3 menit, hanya sampai sedikit encer dan mengilap. Kompot harus panas tetapi tidak mendidih, dengan buah beri tetap mempertahankan bentuknya.


  • 2. Letakkan wajan antilengket 24 cm di atas api sedang. Tambahkan mentega dan biarkan meleleh sepenuhnya, lalu sedikit berbusa dan mulai mengeluarkan aroma kacang tanpa menjadi kecokelatan.


  • 3. Masukkan pancake ke dalam wajan dan hangatkan selama 1 hingga 2 menit per sisi, balik sekali. Permukaannya harus menjadi sedikit renyah di bagian tepi dan panas merata sampai ke dalam, dengan hasil akhir keemasan pucat.


  • 4. Pindahkan pancake ke piring saji hangat. Sendokkan kompot beri panas di atas salah satu sisi, biarkan sedikit mengalir alami di permukaan.


  • 5. Letakkan krim kocok di samping atau di atas pancake dalam gundukan yang rapi dan terkontrol. Taburi merata dengan gula bubuk tepat sebelum disajikan.


  • Penataan dan penyajian



    Susun pancake sedikit saling bergeser, bukan ditumpuk tinggi, agar kompot tetap terlihat. Krim harus tampak bervolume lembut, dan gula bubuk harus terlihat seperti selubung tipis, bukan lapisan tebal. Sajikan segera saat pancake masih hangat dan krim tetap terpisah jelas.

  • Hangatkan kompot hanya sampai menjadi lebih cair; panas berlebih akan mengurangi karakter buah dan membuat hasil akhirnya terlalu encer.
