  • 1. Coniunge allium, liquamen soy, saccharum fuscum, pastam chili, oleum vegetabile, piper nigrum et paprikam in cratere miscendi. Misce donec saccharum dissolvatur et mixtura lenis atque cohaerens fiat.


  • 2. Adde suillam et eam in marinata diligenter verte, mixtura in superficiem compressa. Operi et marina per 30 minuta ad temperaturam ambientem, semel medio tempore versa. Suilla aequaliter obducta et condimentis manifeste tincta esse debet.


  • 3. Furnum ad 190°C calefac. Suillam super craticulam ferream supra lancem assatoriam pone, ut marinata superflua deorsum destillet. Quidquid marinatae in cratere restat reserva.


  • 4. Assa per 55 ad 65 minuta, semel aut bis marinata reservata durante prima parte coctionis illinens. Exterior pars ad colorem mahogani altum obscurari debet, manens tamen nitida.


  • 5. Medium thermometro lectionis instantis examina. Suillam remove cum temperatura interna 68°C attingit. Sine quiescere per 15 minuta; temperatura ascendet et caro relaxabitur.
