  • 120 g suhih testenin

  • 10 g oljčnega olja


  • Zelena omaka


  • 120 g avokada, olupljenega in brez koščice

  • 80 g špinače

  • 20 g oljčnega olja


  • Postopek


  • 1. V srednje velikem loncu zavrite vodo do močnega vretja. Dodajte testenine in jih kuhajte 8 do 10 minut oziroma dokler niso ravno prav mehke, z rahlo čvrstostjo v sredini. Dobro jih odcedite, po potrebi pa prihranite majhno količino vode od kuhanja za redčenje omake.

  • 2. Medtem ko se testenine kuhajo, dajte špinačo v veliko ponev za sotiranje na srednji temperaturi. Mešajte 1 do 2 minuti, le toliko, da popolnoma oveni in postane temno zelena. Takoj jo prenesite v mešalnik.

  • 3. K špinači dodajte avokado in 20 g oljčnega olja. Mešajte, dokler ni zmes popolnoma gladka in svetlo zelena, po potrebi postrgajte stranice posode. Omaka mora biti gosta, sijoča in enotna.

  • 4. Odcejene testenine vrnite v toplo ponev za sotiranje. Dodajte 10 g oljčnega olja in jih na nizki temperaturi na hitro premešajte 30 sekund, da se testenine enakomerno obdajo.

  • 5. Testeninam dodajte omako iz avokada in špinače ter jih nežno premešajte 1 minuto na nizki temperaturi, dokler niso rezanci v celoti obdani in omaka pregreta. Če je omaka pregosta, jo zrahljajte z majhno količino prihranjene vode od kuhanja. Končne testenine morajo biti svilnate in se rahlo oprijemati vsakega rezanca ali oblike.


  • Serviranje


    Testenine zavijte ali naložite v toplo plitvo skledo, pri čemer omako enakomerno razporedite po površini. Postrezite takoj, dokler omaka ostane sijoča in barva živa.
